Kombucha is derived from the Japanese word, kombu, meaning "kelp". It is made by fermenting sugar and boiled black or green tea leaves. A symbiotic colony of yeast and bacteria, or SCOBY, called a mushroom, is used for fermentation. It has medicinal value, but research has not been complete.
